Beef Fried Rice

ingredients

1 lb. lean ground beef
2 cloves garlic, crushed
1 tsp. grated fresh ginger, or 1/4 tsp. ground ginger
2 tbs. water
1 red bell pepper, cut into 1/2-inch pieces
1 6-oz. package frozen pea pods
3 cups cooked rice
3 tbs. soy sauce
2 tsp. dark sesame oil
1/4 cup green onions, thinly sliced

directions

In a large nonstick skillet, brown the ground beef, garlic and ginger over medium heat 8 to 10 minutes or until the beef is no longer pink. As you brown the ground beef, break it up into 3/4-inch crumbles. Remove with a slotted spoon; pour off the drippings.

In the same skillet, heat water over medium-high heat until hot. Add bell pepper and pea pods; cook 3 minutes or until bell pepper is crisp-tender, stirring occasionally. Add rice, soy sauce and sesame oil, and mix well. Return beef to the skillet and heat through, about 5 minutes. Stir in green onions before serving.

Makes 4 servings.
