The pouring of "Sidra", wine of the apple, which seems to contain the essence of the crisp and green countryside, is in itself a ritual. As seen in the picture below, the glass is far from the bottle, so as to air the liquid, and make it less heady. Therefore one can drink "Sidra" to one's heart's content! A small quantity of "Sidra" is poured in the glass and given to one of the guests, who drinks up this delicious elixir, but leaves a couple of drops in the glass. These last drops are discarded onto the floor - so as to wash out the glass - and the glass is then refilled and passed on to the next guest.

The North of Spain is well known for its deliciously and meticulously prepared dishes. If inland the "compulsory" dish is the traditional "fabada" (a dish made of dried beans, meat and sausages), the coast offers a vast variety of fish and seafood. Restaurants and Bars offer hearty local dishes and "Tapas" (appetizer foods).
