Common sense tells you that hawker food prices are kept low because of
competition to retain customer loyalty. So who would believe a hawker who
says that he does it so his customers can save money? Most people would
think that anyone spouting such fibs should be spanked with a frying pan.
The outlook is not fine. Clouds are hanging over fine dining in these stormy
economic times when anything that is a luxury might face the chop. Cost is
an especially crucial factor this year (1998) and thus this section focuses
more on cheap yet tasty hawker fare.
First and foremost, you will be introduced to the Chilli Crab, also known as
Pepper Crab. From our survey results, we concluded that Chilli Crab best
represents Singapore.
To further reinforce our stand, various books and tourist brochures acknowledge
Chilli Crab as the "representative" food of Singaporee. We reckoned that it
was because crabs are found in a few parts of the world and Singaporeans
simply like spicy stuff. With chillis being a Straits spice commonly used by
Singaporeans in their daily cooking and Singaporean's exceptional taste buds,
a dish "christened" as "Chilli Crab" is born. For the recipe, click here:

With the recommendations from the Singapore Tourist Promotion Board, our
friends and relatives, we collated various locations which sell the BEST
Chilli Crab in their opinion. The more popular ones are Newton Food Centre
and Palm Beach Restaurant.
It is not surprising to know that Newton Food Centre opens till well passed
midnight.
In fact, business is best between 11pm to 1 am, especially on
Fridays, Saturdays and Sundays.
This once again demostrates Singaporeans passion for food.
For more exotic food, you should try the Chinatown Food Centre.
