SALADS

LAYERED SALAD


1 medium head lettuce, shredded
1/2 c. thinly sliced celery
10 oz. pkg. frozen peas
1/2 c. thinly sliced onion
1 (8 oz.) can sliced water chestnuts, drained
Layer these in order in large bowl.

Spread 2 cups mayonnaise over the top.
Spread to sides of bowl to seal.
Mix together and sprinkle over the top the following:

2 tsp. sugar
1/2 c. grated Parmesan cheese
1 tsp. seasoned salt
1/4 tsp. garlic powder
Cover and chill for several hours.
Then top with:

1/2 to 3/4 lb. bacon, cooked crisp and crumbled
3 hard-cooked eggs, sliced
2 tomatoes, cut in wedges.

ECLAIR CAKE


2 packages of French Vanilla Instant Pudding
3 cups of milk
1 8 oz. Cool whip
Graham crackers

Combine pudding with milk and beat well. Fold in cool whip. Beat 2 minutes.
Spread graham crackers in bottom of 9 x 13 pan. Pour ½ of pudding over crackers.
Place 2nd layer of crackers over pudding. Pour rest of pudding mix over crackers.
Add 3rd layer of crackers. Make topping.

Topping:
1/3 cup of cocoa
1 cup sugar
1/8 teas. Salt
1/3 cup milk
¼ c up milk
¼ stick margarine
1 tsp. Vanilla

Combine sugar, salt, cocoa, milk Boil 1 minute.
Remove from heat add butter & vanilla Cool slightly.
Pour over 3rd layer of crackers and refrigerate.

AMERICAN BLESSINGS MIX

(from my friend Buzzbuzz)

2 C. Bugles brand corn snacks
2 C. small pretzels
1 C. candy corn
1 C. dried fruit bits or raisins
1 C. peanuts or sunflower seeds
1 C. M&Ms chocolate candy
16 Hershey's chocolate kisses

In a large bowl, gently mix all ingredients except Hershey's Kisses.
Place 1/3 to 1/2 cup Blessing Mix in small cellophane treat bags.
Add one Hershey's Kiss to each bag.
Close bag with chenille stem or twist-tie.

Bugles: Shaped like a cornucopia or Horn of Plenty,
a symbol of our Nation's abundance.

Pretzels: Arms folded in prayer,
a freedom sought by the founders of our country.

Candy Corn: Sacrifices of the Pilgrim's first winter.
Food was so scarce that the settlers survived
on just a few kernels of corn per day.

Nut or Seeds: Promise of a future harvest,
one will reap only if seeds are planted
and tended to with diligence.

Dried Fruits:
Harvest gifts of our bountiful land.

M&Ms: Memories of those who came before us
to guide us to a blessed future.

Hershey's Kiss: The love
of family and friends that sweetens our lives.

EASY WEEKNIGHT CHILI

Vegetable cooking spray
1 pound ground round
1 1/4 cups chopped onion
1 1/4 cups chopped green pepper
6 cloves garlic, pressed
1 (14 1/2 ounce) cans stewed tomatoes,
undrained and chopped
2 (15 ounce) cans kidney beans,drained
1 (8 ounce) can tomato sauce
1 (1 ounce)envelope onion soup mix
1 cup water
3 tbs. chili powder
1 tbs. paprika
1 1/4 tsp. hot sauce
1/4 cup plus 2 tbs (1 1/2 ounces)
shredded reduced-fat sharp Cheddar cheese

Coat a Dutch oven with cooking spray;
place over medium-high heat until hot.
Add meat and next 3 ingredients;
cook until meat is browned,
stirring to crumble. Drain.
Return meat mixture to Dutch oven;
add tomato and next 7 ingredients.
Bring to a boil; cover,
reduce heat, and simmer 20 minutes.
Ladle chili evenly into bowls;
sprinkle with cheese.

TURKEY CASSEROLE


Mix 4 Cups seasoned croutons with:
1/2 cup melted margarine
Then:
mix 2 cans cream of celery soup.
1 can milk
3 or 4 cups turkey
10 oz. frozen peas or brocoli
2 oz. jar pimentos
pepper to taste
Press 1/2 crouton mix into 9x13" pan
Add turkey mixture
Top with rememing croutons
Bake at 350 degrees for 1 hour.
serves 12

PORK CHOP CASSEROLE


5 lb.red potatoes
2 sliced Vadalia onions
2 cans cream of chicken soup
2 cans mushroom soup
4 cups sharp cheese
8 thick pork chops

Grease pan.
Layer thinly sliced potatoes in pan.
Put a layer of thinly sliced Vadalia onions over potatoes.
Spread 2 cups combined soups over potatoes and onions.
Sprinkle 2 cups shredded sharp cheese over soups.
Sear pork chops til brown and place them on top.
Spread remaining soups over pork chops and sprinkle with remaining cheese.
Spray aluminum foil and cover casserole.Bake at 425 for an hour and a half to 2 hours.
Take foil off the last 15 minutes to brown.
Allow to sit for 15 minutes before serving.

ALL MEAT STEW

1 medium size elephant and 2 rabbits (optional)

Cut elephant into bite size pieces.
Add enough gravy to cover.
Cook over kerosene fire
about 4 weeks at 465 degrees.
This serves 3,800 people.

If more are expected,
2 rabbits may be added,
but most people don't like
hare in their stew.

DESSERTS

MOM'S POTATO CANDY
1 medium potato
1 tsp. vanilla
10x sugar(confectioners sugar)
Boil potato with skin on. While hot, peel potato and mash with fork.
Add vanilla and 10x sugar. Mix.
Continue adding sugar until dough forms (mixing with hands).
Roll out some into small balls and dust with cinnamon.
Leave out to dry for a couple days before storing in tin.

VARIATION:
To make pinwheels, roll out dough like pie crust.
Spread with peanut butter, roll up and cut in slices.
Or roll into balls and press walnut halves or maraschino cherries in top.
Always leave out to dry before storing in tin.


DOLORES' SOUR CREAM POUND CAKE

1/2 lb. butter (or 1 stick butter and 1 stick margarine)
3 cups sugar
6 large eggs (separate egg whites and set aside)
1 cup sour cream (8 oz)
2 teasp. vanilla
3 cups cake flour (Softasilk)
1/4 teasp. baking soda

Cream butter and sugar.
Add egg yolks, sour cream & vanilla.
Mix in cake flour and baking soda.
Then beat egg whites stiff & fold in.
Pour into greased & floured tube pan.
Bake at 350 degrees
for 1 hour or 1 hour and 10 minutes.
According to the heat in your oven.

"Crinkle Tops" Cookies

3/4 cup shortening
1 cup sugar
1 egg,beaten
4 TBS. dark molasses
1/2 tsp. salt
2 level tsp. baking soda
1 tsp. ginger
1 tsp. ground cloves
2 cups flour
1 cup raisins
Cream shortening, sugar, egg til smooth.
Add remaining ingredients and mix.
Form into walnut-sized balls
then roll them in granulated sugar
before placing them on ungreased cookie sheet.
Allow room for cookie to spread.
Bake for 8-10 minutes. At 350 degrees.
Don't overbake.
(they will not be chewy if overbaked)

BUTTERSCOTCH COOKIES

3/4 cup shortening
3/4 cup sugar
1/2 cup molasses
1 egg
2 1/4 cup flour
1 1/2 tsp baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp ginger
6 oz. butterscotch morsels
additional sugar
pecan halves
Using a large mixing bowl, cream shortening.
Gradually add 3/4 cup sugar--
beating till light and fluffy.
Add molasses and egg-- beat well.
Combine flour, soda salt, cinnamon and ginger.
Add to creamed mixture, beating well.
Stir in butterscotch morsels.
Cover and regrigerate at least 2 hours.
Shape dough into 1" balls,
roll in additional sugar to coat well.
Place balls 2" apart on greased cookie sheets.
Gently press a pecan half in center.
Bake at 350 degrees.
10 minutes or until brown.
Cool on wire racks.

BANANA SPLIT CAKE

2 cups graham cracker crumbs
1 stick melted margarine
1 cup unmelted margarine
2 1/2 cups powdered sugar
2 eggs
4-5 sliced bananas
1 large can crushed pineapple (drained)
1 large container cool-whip
1 cup chopped pecans
1 cup coconut
1 can cherry pie filling

In a small bowl, mix graham cracker crumbs
and melted margarine until moistened.
Firmly press mixture into bottom of 9x13" pan.
In a large mixing bowl,
mix on medium speed, remaining margarine,
eggs & powdered sugar
for 15 minutes.
Spread over graham cracker crust.
Layer bananas, pineapple & cool-whip
over "powdered sugar" mixture.
Sprinkle with coconut & cherries
.... top with pecans.
Refrigerate overnight.
Enjoy!

***Note:if you do not like bananas,
this cake is still DELICIOUS
without the bananas****

NEIMAN-MARCUS COOKIES
(Recipe may be halved)


2 cups butter
24 oz. chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)

Measure oatmeal,
and blend in a blender to a fine powder.
Cream the butter and both sugars.
Add eggs and vanilla, mix together
with flour, oatmeal, salt, baking powder, and soda.
Add chocolate chips, Hershey Bar,and nuts
Rollinto balls, and place
two inches apart on a cookie sheet.
Bake for 10 minutes at 375 degrees.
Makes 112 cookies.

DUMP CAKE

1 jar pie filling
1 (20 oz) can crushed pineapple
1 stick butter or margarine
1 pack chopped walnuts
1 small pack coconut (if desired)
1 box yellow cake (Pillsbury Plus)
In a 9x12 inch pan, put pie filling on bottom,
then layer pineapple, cake mix
and butter in small pats,
nuts and then coconut.
Bake at 350 degrees for 1 hour

DIRT DESSERT


1/2 cup butter or margarine
8 oz. cream cheese
1 cup powdered sugar
1 (20 oz) pkg. Oreos (cookies)
3 1/2 cup milk
2 (3 oz) boxes instant vanilla pudding
1 (12 oz) CoolWhip
a new sand bucket (flower pot)
Cream butter, cream cheese
and powdered sugar in a large bowl.
Set aside.
In separate bowl, mix milk, pudding and cool Whip.
Add mixture to the cream cheese mixture.
Crush Oreo cookies in food processor.
Layer 1/3 cookies in bottom of flower pot.
Then 1/2 cream cheese and Cool Whip mixture.
Then another 1/3 of cookies.
Add the last of the cream mixture
and top with remaining cookies.
Slip artificial flower in top and refrigerate.
(you can add gummy worms.)

DOCTOR BIRD CAKE


3 Cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups sugar
1 tespoon salt
3 eggs, beaten
3/4 cup oil
1 1/2 teaspoons vanilla
8 ounces crushed pineapple, undrained
2 cups diced bananas
1 cup chopped or broken pecans or walnuts, optional

Measure and sift dry ingredients
into a large mixing bowl.
Make a well in the center
and add the eggs, oil,
vanilla, pineapple, bananas and nuts.
Stir until well-blended, but do not beat.

Preheat oven to 350.
Pour the batter into a greased tube pan.
Bake for 1 hour and 20 minutes.
The cake will crack slightly on top.Cool on a rack in the pan.

The cake can be served plain,
dusted with 10x sugar or with whipped cream,
or iced with a cream cheese frosting .
