Escalcalchi (Fish Marinade)
Ingredients:

2.5 lbs mackerel

4oz flour

8 fluid oz of oil

1 large onion, cut into rings

1 large sweet pepper, cut into strips

4 tablespoons of capers,olives,cucumbers or any pickled vegetables

1 dessertsp of salt

1/4 tsp black pepper

1/4 tsp paprika

Enough oil and vinegar in equal parts to completely cover the fish (approximately 1 1/2 pints)

Slice the fish into small pieces, flour and fry in oil. Drain and put into a china or earthenware bowl with a lid. Fry the sliced onion and the pepper in the oil that the fish was fried in. Cover the fish with the onion, pepper and pickled vegetables. Add salt, black pepper and paprika. Cover with equal parts of oil and vinegar. Leave for at least 7 days. Makes 5-6 servings. Serve with toast or small salted crackers.
