Easter bread
Folares

Massa sovada dough. When it has risen shape it round and place inside a whole egg, from 1 to 5, according to the size of the bread you want, crossing on top with stripes of dough. Cover with a blanket and let it rise again, double its size. Bake.

Folar (Flores)

Shopping list:

  • 4 kg flour
  • 1 kg sugar
  • 50 grs baker's yeast
  • 1 kg butter
  • 2 lemons
  • 1 clc moonshine
  • nutmeg
  • salt
  • milk
  • 24 eggs
  • egg yolk to place over to make the bread shiny

Mix the yeast with a little warm water, mixing a little of flour and let it rise. Beat the eggs with the sugar, pour the boiling milk stirring constantly and with energy. Mix the flour and the yeast with the butter and the other ingredients. Cover with a cloth and blanket and let it rise for 2 or 3 hours. Shape into cakes and brush with the egg yolk. Place the cooked eggs covering eight stripes of dough. You may also bake into a cake pan.

Peanuts/Almonds
(Amendoas)

Shopping list:

  • c. raw peanuts/almonds
  • 1 c. sugar
  • 1 c. water

Place in a pan and stirr with a wooden spoon constantly. Let the sugar turn brown color and liquid. When ready pour ober a greased dish and stirr with two forks so that the peanuts don's stick.

Nut and banana bread
(Pão de nozes e banana)

Shopping list:

  • 2 1/2 c flour
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 31/2 tsp. baking soda
  • 3 tbs. oil
  • 1/2 c milk
  • 11/4 c. sliced banana
  • 1 egg
  • 1 c dashed nuts

Mix all very well and take into hot oven until baked.

Nut and raisin bread
(Pão de nozes e passas)

Shopping list:

  • 1 c. nuts
  • 1 c. raisins
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 eggs
  • 3/4 c boiling water
  • 1 c. sugar
  • 1 1/2 c. flour

Add the sliced nuts, raisins, soda, baking powder and water mixing well and let it stand for 15 minutes.
On the side mix the other ingredients and afterwards the 2 mixtures together. Place in a greased form and bake in hot oven.

Easter Dove
(Pomba Pascal)

Shopping list:

  • 500 grs flour
  • 125 grs butter
  • 5 egg yolks
  • 125 grs sugar
  • 1,5 dl milk
  • 30 grs baking powder (baker's)
  • 1 lemon
  • 1/2 coffee spoon salt

Mix the yeast with the warm milk and some flour and let it rise for 15 minutes in a warm place. Beat the butter with the sugar until turns white. Add the egg yolks one at a time, the salt and yeast. Sift the rest of the flour and the lemon rind, adding to the mixture. Place in a bowl and let it rise again. Take into hot oven until brown.

Decoration

  • 1 egg white
  • 50 grs sugar
  • 50 grs pealed almond
  • icing sugar

Top

Molotov
(Pudim Molotov)

Shopping list:

  • 7 egg whites very stiff
  • 1 cup of caramel sugar
  • 1 coffee spoon of baking soda
  • greased pan

Place in a very hot oven until golden. Cover with egg cream Never open the oven until ready.

Apple tart
(Tarte de maçã)

Shopping list:

Dough

  • 1/2 c. butter
  • 1/2 c. sugar
  • 1 1/2 c. flour
  • 1/2 c. nuts

Mix by hand. Place in a greased pie dish half of the dough.

Filling

  • 5 c. sliced apples
  • 2 tbs. flour
  • 1/2 c. sugar
  • 1/2 tsp. cinnamon

Place over the dough and cover it with the remaining dough.
Boil 1/2 litter of milk with 1/2 litter of water.
When boiling add 1/2 kg of dissolved flour stirring strongly with a wooden spoon. Let it cool and add 9 eggs, one at a time stirring constantly. With 2 dessert spoons shape round and fry over hot oil.

Charlotte (Charlote)

Grease an oven dish or pan and cover with vegetable paper.
Mix 1/2 dl of rum with the juice of a canned pineapple. Slightly soak 1/2 kg of la reine cookies placing on the bottom of a Pyrex.
Beat 1/2 litter of cream with 400 grs of sugar, 250 grs of shredded cooking chocolate and the pineapple cut into small pieces. Pour over the cookies and take into the freezer for 3 hours.

Country cup cakes
(Saloias)

Shopping list:

  • 250 grs flour
  • 1 tbs. lard
  • water

Mix well until it is soft. Roll very thinly and cover small cup cakes.

Filling

  • 1 white fresh cheese
  • 2 la reine cookies
  • cinnamon
  • 250 grs sugar
  • 6 egg yolks
  • 2 whole eggs

Mix all very well and fill the cup cakes. Take into the oven for 30 minutes or until baked.

Fresh cheese pudding
(Pudim de queijo fresco)

Shopping list:

  • 200 grs fresh cheese
  • 2 dl whipping cream
  • 1 tbs. instant coffee dissolved
  • 4 tbs. sugar

Have it well mixed until foamy and leave in the refrigerator until it is very cold.

Tart
(Torta)

Shopping list:

  • 8 egg white stiffed
  • 8 tbs. sugar
  • 4 tbs. flour
  • 4 tsp. baking powder
  • lemon rind

Beat all together and take into the oven in a greased pan.

Cookies
(Bolachas)

Shopping list:

  • 125 grs butter
  • 125 grs sugar
  • 250 grs flour
  • 1 egg

Mix all well and cut into cookie shape. Place in the oven tray and watch until they are gold.

Plate dessert
(Doce de travessa)

Shopping list:

  • 2 c sugar
  • 8 egg yolks
  • juice of 2 lemons
  • the inside of 1/2 bread (Italian or Portuguese)
  • 1 l milk

Mix the milk with the lemon and after boiling add the bread. Take away from the stove and slowly add the previously beaten egg yolks. Pour into a plate and cover with cinnamon.

Pineapple cup cakes from "Nacional"
(Bolo de ananás do "Nacional")

Shopping list:

  • 1 egg
  • 300 grs flour
  • 100 grs sugar
  • 100 grs lard
  • 50 grs butter
  • 1 coffee spoon baking powder

Knead very well and shape into the cupcakes without greasing.

Filling

  • 400 grs sugar let it boil with water until turn orange color
  • 400 grs pineapple cut into small pieces
  • 2 egg yolks
  • 2 whole eggs

When the sugar is thick mix the pineapple and let it boil for 5 minutes. When cool add the beaten eggs. Fill the cupcakes and take into the oven until brown.

Chila preserve
(Doce de Chila)

After throwing the fruit on the ground let it soak with plenty of water and salt for at least 24 hours. Boil and soak again. With a fork, and never with your hands take apart the pieces of the fruit. Add the same corresponding weight of sugar and palace in a pan over the stove until the sugar is thick.

Lemon cake
(Bolo de Limão)

Shopping list:

  • 1/2 c margarine
  • 1/2 c sugar
  • 4 egg yolks
  • lemon rind
  • 2 tea c flour
  • 1 tbs baking powder
  • 4 egg whites stiff
  • 1/2 tea c sugared fruits (option)

Beat the margarine and add the sugar slowly and all the other ingredients and at last the stiffed egg whites. Pour in a greased pan and take into the oven to bake.

Filling:

  • 1 can condensed milk
  • 8 tbs. sugar
  • lemon juice
  • 1 tsp. lemon rind
  • 1 c sugar

Blend until it is creamy. Cut the cake in 2 pieces and fill in with the cream and some powdered sugar. Take for a few minutes in the refrigerator before serving.

Lamb with capers sauce
(Carneiro com molho de alcaparras)

Cook the piece of lamb with 2 garlic cloves or more, 2 cravo sticks, 6 pepper corns, 1 bay leaf, 1 sprig of tomilho, salt, vinegar, white wine.

Sauce

Mix 1 tbl spoon of flour with some of the broth where you cooked the lamb, let it boil, add butte and the capers boiling a little more. Pour over the lamb and serve.

Young goat in the oven
(Cabrito assado)

Shopping list:

  • 1/2 goat
  • onions
  • garlic
  • pepper
  • tomato purée
  • sweet pepper
  • 1 c. wine
  • 2 c. white wine
  • 2 tbs. lard
  • salt

Clean the goat well and take all the fat. Let it boil for 15 minutes. Place in an oven dish and pour over all the seasonings with 2 c. of water. Let it roast, adding potatoes if you like.

Lamb's leg
(Perna de borrego - Santa Maria)

Shopping list:

  • 1 lamb's leg
  • 1 c red white wine
  • colorau
  • garlic
  • tomato purée
  • tomato paste
  • bay leaf
  • 50 grs butter
  • 6 tbs. olive oil
  • salt

Mix all the seasonings and cover the leg with the sliced onions as well. Leave until the next day. Roast turning until it is toasted in all sides and well done, rectifying the seasoning if needed.

Lamb
(Borrego)

In 40 gr. butter place a piece of lam and let it fry. Add peeled potatoes cut in cubes and another 40 grs. of butter. spice to taste. Place in the oven and let it roast well. With the remaining gravy of the oven pan place in a pan, add 1/2 c. white wine, meat broth, spice to taste and let it boil for a few minutes. Pour over the lamb with some minced parsley. Serve hot.

Pascal eggs
(Omeleta Pascal)

Eggs laid on the Good-Friday. Scramble and fry. Serve with pieces of bacon, sausage or similar.

Lamb's leg
(Pernil)

Let marinade in red white, brandy, herbs, for 2 days a lamb's leg. Inject the marinade into the meat and place in the oven to rash. With the gravy left add pieces of pineapple and let it boil pouring over the leg.
