I have figured out how to make potato chips with no fat or salt... and they're GOOD. Crunchy and tasty! You will never miss the fat or the salt! One small potato makes a whole bowl full of chips.

I LOVE these things. You can season them with anything you like. I am partial to McCormick Salt Free "It's a Dilly" and/or Mrs. Dash Southwest Chipotle....I swear....that chick's really got it going on!

I tried the "oven-roasted" potato chips and was disappointed, so it took me a couple of weeks to attempt this recipe; it's AMAZING. ~randilee

NSA seasonings of your choice

cooking spray*

Use a mandolin to slice potato paper thin.

Place them in a single layer on a microwave safe rack (a microwave bacon rack works very well) that has been sprayed lightly with "Pam"* or something similar.

Sprinkle potatoes with NSA garlic pepper or what ever seasoning you like.

Microwave on high for a 4 to 8 minutes. You'll have to watch them carefully the first time to see what's right depending on the wattage, etc. of your microwave. Check on them every 2 minutes.

DILL PICKLE CHIPS: Microwave for 1 minute, brush with vinegar. Microwave another minute, brush with more vinegar. Microwave for 1 more minute, more vinegar and sprinkle them with a mix I made of dill, garlic powder, onion powder, pepper and paprika and then microwave for 2 minute. (My microwave only takes 5 minutes on High). I'm in HEAVEN!
