Lemon *Burst* Bites

I found the original 'Lemon Bites' recipe a little blah! I've added real lemon juice and this increased the lemon flavour 10 fold and left the 'bites' really moist! ~randilee

¼ cup

1 Tbsp

2 Tbsp

4 drops

¼ cup

egg whites

Splenda®

lemon zest*

lemon juice*

yellow food color (optional - but it adds to the effect)

ground oatmeal

Preheat oven to 350 degrees.

Using a hand-blender or a MagicBullet®, beat together egg whites, Splenda®, lemon zest and juice, and food coloring (if using). Blend for about 15 seconds until 'frothy'.

Add oatmeal and blend for another 15 seconds.

Divided equally amongst 6 mini muffins.

Bake for 10 minutes.

* This is about the juice and zest of one small lemon.

Margarita *Burst* Bites: Substitute lime juice and zest for the lemon and add 1 tsp of Rum extract

Pina Colada *Burst* Bites: Substitute crushed pineapple for the lemon juice and zest, add 1 tsp of Rum extract and 1 tsp of Coconut extract
