ingredients

1/3 cup cocoa powder
2/3 cup all-purpose flour
2/3 cup sugar
3/4 tsp. baking soda
1/2 tsp. baking powder
1/8 tsp. salt
1/3 cup boiling water
1 tsp. instant coffee
1/3 cup fat-free milk
1 jar (2 1/2 oz) prune baby food
2 egg whites
1 1/2 tsp. vanilla extract


directions

Preheat oven to 350 degrees.  coat an 8x8 baking pan with nonstick spray.

Sift cocoa powder into a large bowl.  Add flour, sugar, baking soda, baking powder, and salt.  Mix well and set aside.

In a medium bowl, dissolve the coffee in the water.  Add milk, baby food, egg whites, and vanilla extract.  Mix well.  Pour over the cocoa mixture and combine thoroughly.

Pour batter into the prepared pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.

Place the pan on a wire rack and allow to cool for 10 minutes. Invert the brownies onto a cutting board and allow to cool completely before cutting. 

Before serving, dust lightly with confectioners' sugar (optional).
