As a child I can remember my mother always cooking up the most delectable treats for our dinners and snacks. I created this page, to share with those of you who are interested, the recipes I have collected over the years from my mother and ones from the numerous cookbooks in my collection! I love to collect cookbooks!

~~Fabulous Pasta Salad~~

This pasta salad recipe was given to me by a friend after she brought some over for lunch and I absolutely HAD to have the recipe!

1 lb. Spaghetti
2 ½ lbs. fresh ripe tomatoes, peeled, seeded and chopped
6 cloves Garlic, minced
4 tbsp. olive oil
½ tsp. each salt and hot red pepper flakes
¾ cup Parmesan and Romano cheese blend

In serving bowl combine all ingredients except for the cheeses and pasta and allow to sit for half an hour so flavours may blend. Cook pasta to al dente and drain. Add the pasta and cheese to the mixture in serving bowl and toss. Serve immediately. Absolutely delicious and garlicy!!!


~~Classic Stuffed Peppers~~

6 medium green peppers
1 lb. ground beef
2 tbsp. oil
½ cup each, chopped celery and chopped onion
2 cups hot cooked rice
1½ cups shredded jarlsberg cheese (I also like cheddar)
1 can 16oz tomatoes, chopped and drained
1 tsp. salt, ¼ tsp. pepper, ½ tsp. basil
1 can, 16oz, tomato sauce (I like the unseasoned)
1 large can of sweet kernel corn, drained
Opt. I love loads of garlic and oregano in my cooking so you can go ahead and use as much as you like. I use LOTS!!!

Remove tops and seeds from the peppers and par-boil them for about five minutes till slighty tender. Brown your beef with the oil and drain excess fat, though you want to leave a little to help brown the onions. Add the celery and onions to the beef and fry till the onions are translucent. Remove from the heat and stir in your cooked rice, corn, tomatoes and cheese(reserving some of it for the top of your peppers) and some of the tomato sauce. Add your spices to the mixture. Now you can stuff the peppers and top with the remaining tomato sauce and cheese. Bake at 350º for 30 minutes till the top cheese is bubbling. Serve and ENJOY!!!!


~~Heavenly Ranch Chicken~~

6 chicken breasts, skinned and cleaned
½ cup melted butter
¾ cup grated parmesan cheese
¾ cup cornflake crumbs
1 pkg. of ranch powdered salad dressing mix
LOTS OF GARLIC!!!*smiles*

Mix all ingredients except chicken together in a bowl. Dip washed and drained chicken in butter, then dredge in your mixture. Place on well greased baking dish, or foil covered dish if you do not want to use the oil. If you have any mixture left after dredging, sprinkle over chicken on pan. Bake for 45 minutes at 350º, or until golden. ENJOY!!!! (one of my favourites)
