Cornmeal and Currant Muffin Mix


(Recipe from: Parenting Magazine Dec/Jan 1996)

Preparation time: 5 minutes

Makes 12 Muffins

Lucky recipients can whip up a scrumptious breakfast in no time.

Ingredients for one bag:

1-1/2 cups yellow cornmeal
2 cups white flour
1-1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup currants
1/2 cup sugar

Throughly combine all the ingredients and pour into a clean "lunch size" paper bag. The bag should have it's label already affixed (see below for label text.) You may wish to decorate the bag before filling.

After filling the bag with the muffin mix, fold down the top edge twice about 1/2" each time and staple once in the middle to secure. Cover staple with a stick-on bow. Or, instead of stapling the bag shut, punch two holes in the center of the bag about 1-inch apart and lace a ribbon through, tie a bow in front.

How to Make Cornmeal and Currant Muffins: Preheat the oven to 450 degrees. Spray a muffin tin with non-stick cooking spray. Empty the mix into a large bowl and add 1/4 cup canola oil and 2 cups buttermilk, blending swiftly with a wooden spoon. Pour the batter into the prepared muffin tin, and bake for 20 minutes. Enjoy!


Ayyam-i-Ha Tea

This is mixed in bulk, then divided into four portions.

Ingredients for four bags or cans:

two cans Twinings Earl Grey tea
one can Twinings Orange Pico tea

Mix together all the tea and divide into four parts. Place each into a decorated tin or bag.

Decorate the empty tins with sticky contact paper or glue on wrapping paper. Wrap a ribbon around the can after affixing the instruction label.

Or, prepare 4 paper bags as described above for the muffins, but this time place the tea mixture in a secured plastic bag first before placing it in the decorated paper bag. Tie a new tea infuser to the ribbon as an extra gift.
