"Better Than Sex" Cheesecake

1 store-bought 9" chocolate crumb pie crust
2 8-oz. pkgs. cream cheese, softened
1/2 c. sugar
1/2 tsp. vanilla
2 eggs
20 caramels
2 Tbsp. milk
1/2 c. of a combination of: coarsely chopped pecans, semisweet chocolate morsels, and Skor toffee bits (you don't need to measure the individual
items separately, just toss 'em together in roughly equal amounts to make 1/2 c. total)
Preheat oven to 350 degrees. Unwrap caramels and place in a glass measuring
cup together with the milk. Microwave on 50% power until caramels are melted, stirring to combine caramel and milk until smooth.
(This can also be done stovetop, but watch it carefully so it doesn't burn.).
Stir in the combined morsels, toffee bits, and nuts. Pour into pie crust.
In a mixing bowl, beat together cream cheese, sugar, vanilla and eggs until creamy and
smooth. Pour this batter over the caramel mixture. Bake at 350 degrees for
about 40 minutes or until center is *almost* set but not wet to the touch.
Cool on a wire rack, then refrigerate at least 4 hours before serving. Garnish with whipped cream (and additional sprinklings of nuts, toffee bits,
or chips if desired).
