4 slices    bacon
8 fresh      ears of corn
1/4 c.         butter
1 tsp.         salt
2 large      tomatoes

Directions:

1. Preheat oven to 350 deg.
In a large skillet, fry bacon on med-high heat until crispy. Drain on a paper towel, let cool. Cumble and set aside.
2. Cut corn from the ear. In a skillet, add butter and corn, cook over med. heat, stirring constantly for 5 min. Add bacon and salt, remove from heat.
3. Spread layer of corn mix in a 2 qrt. casserole dish and top w/sliced tomato. Repeat layer twice having tomatoe be the top layer.
4. Bake uncovered, for approx. 30 or until corn is tender.

Serve hot with entree.

                                MISTRESS AL'VERE's HONEY CAKES

1/2 c          sweet white wine
2 tbl.         sugar
1               egg
1 c.           honey
2/3 c.        flour
1/8 tsp.     nutmeg
1/8 tsp.     cinnamon
approx. 3 c.  oil

Use a medium skillet. Pour enough oil to deep fry. (approx 3 cups more or less)
Beat the wine & egg in a medium bowl. In a separate bowl, combine four, cinnamon salt & sugar and then add to the egg mixture. Let stand for 30 min.
In a smaller bowl mix honey & nutmeg, set aside.
After the batter has rested, heat oil (test wth a small drizzle of batter..it should immediatley fry)
Drop batter by large spoonfuls, CAREFULLY into the hot oil. Turn to golden brown evenly. With a slotted spoon, remove from the cakes onto a towel (paper) to drain.
When cool to touch, dip cakes into the honey mixture and place on a plate.
Let cool completely. Yields 1 & 1/2 dozen.

                                    BORDERLAND MORNING BREW
                                         (Turkish Coffee/Expresso)

4 tsp.           very finely ground coffee
1 c.              water

(degree of sweetness, to taste and optional)
1 tsp.          sweetner (mild)
2 tsp.          sweetner (meduim)
4 tsp.          sweetner (very sweet)

Place coffee, water and sugar into a pot. Brew over very low heat (on a hot stone next to fire is good).
Sitr occasionally, until the froth on the surface bagins to rise. DO NOT BOIL.
Remove from heat briefly to prevent boiling.
Return to heat, to just under boiling.
Remove and carefully pour into small traveling cups. Cafeful not to pour grounds.
Try not to drink the residue. :-P
**Alternate straining: use a clean, white sheer cloth or scarf, to strain coffee free of grounds, by pouring into a bowl. Discard grounds and wash clean. Return to pot and reheat.

Special Flavorings: several cardamon seeds and/or cinnamon and/or cloves.
Makes about 4 small cups.
