My Favorite Recipe
Oyster Stew
Ingredients:
1/2 stick of butter
1 Tbl flour
1 sm bunch green onion chopped fine
1 qt milk
Worchestershire sauce to taste
1 rib Celery-chopped fine
6 whole cloves
Red Pepper to taste
White Pepper to taste
Salt to taste
3 dozen oysters with liquid.
Optional = Old Bay Seafood/Poultry Seasoning - to taste.
A dash of TLC
Preparation:
Make roux of flour & butter. 

Add white part of onion and cook a couple of minutes. 

Heat milk seperately and add to roux stirring constantly. 

Add green part of onion, celery, cloves and seasonings. 

Cook slowly.  when thickened, add oysters and liquid. 

Do not boil.

Remove cloves before serving.

Optional -  Add Old Bay Seafood seasoning to taste

Mexican Cornbread
Ingredients:
2 Boxes cornbread mix -- prepared as per box instructions

1 lb ground beef -- browned and crumbled
2 - 3 sm cans chopped jalapeno peppers (according to taste)
1 lg can creamed corn
1 lg can whole kernel corn-drained
1/2 c. red bell pepper -- chopped
1 medium - lg (according to taste) yellow onion - chopped
2 c cheddar cheese -- shredded
Salt/Pepper to taste
Garlic salt to taste
A dash of TLC
Preparation:
Pour half cornbread mixture into greased 9X13 cassarole dish
Layer remaining ingredients on top cornbread mixture. 

Pour other half of cornbread mixture on top. 

Sprinkle light amount of sugar on top of cornbread mixture.. 

Bake per instructions on cornbread box.

Holiday Cheese Ball
Ingredients:
3 tablespoons finely chopped pecans
1 package (8 ounces) Neufchatel cream cheese (room temp)
3 green onions (finely chopped with tops, 1/3 cup)
1 teaspoon Dijon mustard
1/4 teaspoon hot red pepper sauce
1/4 teaspoon minced garlic
1 cup shredded sharp cheddar cheese (4ounces)
1/4 cup minced parsley

A dash of TLC
Preparation:
Preheat the oven to 350 degrees and spread out the pecans in a small pan. Bake, tossing once, for 8 minutes or until toasted.

Meanwhile, in a small bowl, place the cream cheese, onions, mustard, red pepper sauce, and garlic. With an electric mixer at mocerate spead, beat for 3 minutes or until well blended.

Stir in the cheddar cheese. Wrap the mixture in plastic wrap, shaped into a 4-inch ball and chill for 15 minutes.

On wax paper, toss the toasted pecans with the parsley.
Unwrap  the cheese ball and carefully roll it in the parsley mixture, coating it completely.

Rewrap in plastic wrap and refrigerate until time to serve.
Place ball on a serving platter and surround with an assortment of crackers.

Yield: 24 servings
