NONG SHIM SHIN RAMYUN
SEASON PACKET: salt, sugar, hydrolized vegetable protein(soybean, salt, maltodextrin), soybean paste powder(soybean, salt), spices(red peper, garlic, onion, black pepper), capsicum, paprika, mushroom.
VEGETABLES: green onion, shitake mushroom, red pepper, carrot
SPICYNESS: 4
COMMENT: The legendary shin ramyun. Probably the world's favorite ramen.  The noodles have a nice chewy texture. There's a slight beef flavor in the broth, but the spicyness really sets the tone of the broth. The addition of capsicum really adds to the fire. With the addition of shitake mushroom,  shin ramyun is one of my favorites.

NONG SHIM NEOGURI UDON SEAFOOD & SPICY
SEASON PACKET: salt, sugar, soy sauce powder(soybean, salt, malto dextrine), spices(red pepper, garlic, onion, black pepper), bonito powder, cuttlefish powder
VEGETABLES: mussel, green onion, carrot
SPICYNESS: 4
COMMENT: This ramen has thicker noodles being that they are udon. Nice and chewy. The broth is very spicy and has a nice seafood flavor. The addition of dehydrated mussels is nice. They provide a chewy texture. I did discover little square sheets of seaweed which were not listed in the ingredient list. Plus, there is a generous amount of green onion and seaweed. The only negative I could find was the greasy film that the broth left in my mouth.

NONG SHIM KIMCHI
Season Packet: salt, sugar, soysauce powder(soybean, salt), citric acid, caramel color
*note- Even though the broth was spicy, there was nothing listed in the ingredient list that indicated this. I believe that red pepper powder was not listed.
Vegetable Packet: kimchi flake, chinese cabbage, carrot, green onion
Spicyness: 3
Comment: The taste of kimchi is quite strong in the broth. There is a gentle spicyness detected. A  big supply of vegetables really set the tone. This one is quite suited for vegetarians.

NONG SHIM ANSUNGTANGMYUN
Season Packet: salt, monosodium glutamate, spices(red pepper, garlic, onion, black pepper), sugar, soy sauce powder(soy bean, salt, dextrin), soy bean paste powder(soy bean, wheat flour, salt), carrot, green onion, seaweed
Spicyness: 5
Comment: This is one of the hottest ramen tested to date. The broth is very spicey. So much spice it seems to mask the other flavors of the broth. What happened to putting the veggies in a separate packet?

NONG SHIM SEAFOOD RAMYUN
Season Packet: salt, monosodium glutamate, sugar, red pepper, mussel, soysauce(soybean, salt), cuttlefish, shrimp powder, garlic, black pepper, mushroom, ginger, onion, seaweed
Flake: seaweed, chives, fish cake, carrot, cuttlefish
Spicyness: 4
Comment: Another offering of seafood flavor ramen. There's a gentle seafood taste. Not overpowering. The spicyness is there, but doesn't overpower the seafood flavor. There's a ample supple of seaweed and the chewy cuttlefish provide a nice texture.

NONG SHIM MU-PUMA TANG MYUN
Season Packet: monosodium glutamate, salt, spices(red pepper, onion, garlic, black pepper, ginger), radish juice powder, sugar, caramel powder, disoddium  succinate
Season Padck2: red pepper powder, garlic powder, radish juice powder
Flake: green onion, radish flake, textured soy protein, cabbage, red pepper
Spicyness: 4
Overall: This is a new offering from nong shim. In additon to your season packet, you get an additional packet for extra spicyness and flavor. Something new fron nong shim. The ramen is made with a whopping 3 cups of water. The noodles were chewy and good, as nong shim usually is. The broth was different. A very slight sour taste to it and a hint of beef flavor(where that comes from I have no idea). At first the broth is moderately spicy, but the more you have the hotter it gets. The flake are also a little unusual for nong shim. They are huge pieces! They add a good texture to the ramen and the soy protein looks like pieces of beer. My only complaint would be, that this ramen seemed to leave a greasy film in your mouth.

NONG SHIM SOY HOT & SPICY
Season Packet: soy bean paste powder(soybean, salt), monosodium glutatmate, seasoning, salt, soy sauce powder(soybeans, salt, malto dextrine), spices(red pepper, black pepper, onion, garlic, ginger, caramel powder, dextrin
Flake: chinese cabbage, green onion, red pepper, seaweed
Spicyness: 4
Comment: Here is a different offering from Nong Shim. A soy based broth. There's a salty soy taste then the spicyness comes out in the broth. At times the spicyness takes away from the soy flavor, but in the end they blend well together. The noodles are chewy are hold up not becoming to mushy. Theres a lot of flake in the mixture. But I did find a lot of carrot that wasn't listed in the ingredients. Overall a nice ramen.

NONG SHIM POTATO RAMEN
Season Packet: beef seasoning(roasted onion, salt, dextrin, monosodium glutamate, beef bone extract, corn flour, beef extract), salt, vegetable seasoning(cabbage extract, white cabbage, onion extract), spices(red pepper, black pepper, onion, garlic, ginger), monosodium glutamate, tapioca starch, soy sauce powder(soy bean, salt, dextrin), radish juice powder(radish juice, dextrin), hydrolysed vegetable protein(soy bean, salt, dextrin), capsicum powder(capsicum, dextrin, bum arabic, glucose), yeast extract powder, disodium 5-inosinate, disodium 5-guanylate.
Flake: onion, mushroom, green onion, garlic, red pepper
Spicyness: 3
Comment: The noodles in this ramen are made with potatoes. They are a little soggier than the normal wheat found in ramen, but I like these better. They are not as chewy, but hold up well in the broth. The broth is what makes this ramen. This has to be the best broth so far by nong shim. There are so many flavors that show up from beefy flavor to a veggie radish flavor. Just the right amount of spice. The dried veggies are huge. And something I haven't seen before in ramen is sliced white onion. This is a winner from Nong Shim.

NONG SHIM UDON
Soup Base: water, soysauce(soybean, salt), anchovy extract, salt, monosodium glutamate, glucose, caramel powder
Extra Season Packet: red pepper flake
Flake: dried fish cake(pollack, wheat flour), green onion, laver, red pepper flake- also contained rice puffs(?) which were not mentioned in the ingredient list
Spicyness: 4
Comment: The udon are in a wet pack so no need to rehydrate them. The noodles were thick and chewy, the way udon need to be. The broth was salty and I really didn't detect a fish taste. The extra red pepper pack added extra spicyness which I like. The broth was a little bit oily. The addition of the  seasoned rice puffs, I guess thats what they are and the rest of the flake mixture provided a lot of flavor. Another great ramen from Nong Shim.

NONG SHIM
Dipping Sauce: salt, vinegar, soy sauce, sugar
Flake for dipping sauce: green onion and puffs(?)
Spicyness: 1
Comment: This entire package of ramen is in Korean except for a little sticker on the back listing part of the ingredients. And not all of them I might add. When I find out what variety this is I will update the name, but it appears to be buckwheat noodles with no broth and a dipping sauce. So this is a much different ramen. After draining the water from the noodles you dip some in the sauce and eat it that way. The sauce was salty and sweet much like the japanese dipping sauces I have had before. This was very good. A different kind of ramen from Nong Shim.

NONG SHIM NEOGURI UDON MILD TASTE
Season Packet: salt, soysauce powder, tunny powder, sugar, monosodium glutamate, glucose, onion powder, caramel color, red pepper, kimchee, anchovy, mussel extract, dextrine, garlic, white pepper
Dehydrated Mix: fried soybean curd, seatangle, green onion, laver
Spicyness: 2
Comment:
This ramen is similiar to the neoguri udon I have done previously. The broth was mildly spicy and the smell and taste had a "fishy" flavor. The laver was a big rectangle sheet which is used in flavoring broths. The noodles were chewy and held up well in the broth. Be hungry for this one as Nong Shim has again made this one a large meal with the amount of noodles.

NONG SHIM CHAJANG MYUN
Package Size: 4.94oz/140g
Soup Mix: soybean paste(wheat flour, water, soybean, salt), caramel powder, sugar, monosodium glutamate, salt
Dehydrated Mix: textured vegetable protein, onion, cabbage, carrot, potato
Oil Packet: roasted onion oil, roasted seasoning oil, olive oil
Spicyness: 1
Comment: Chajang Myun is a popular black bean paste over noodles but oddly enough that ingredient seems to have been left out of the ingredient list. The noodles were cooked first then the soup mix added. The flavor was a little bland mostly a salty flavor. The veggies added some texture but for this one you will need to add some extra items to make it more flavorful. No spicyness which is typical of this style, but not much flavor either.

NONG SHIM BIBIMMYUN
Package Size: 4.8oz/137g
Liquid Soup Base: apple, canola oil, caramel color, chinese cabbage, chives, citric acid, corn oil, dextrin, disodium guanylate, disodium inosinate, fructose, garlic, ginger, glucose, glycine, garpe juice, guar gum, hydrolyzed soy protein, malic acid, mandarin, monosodium glutmate, mustard, natural flavorings, onion, pear, radish, salt, seaweed, seseame oil, sesame seed, spices, sugar, sunflower oil, tapioca startch, TBHQ, vinegar, yeast extract
Spicyness: 1
Comment: bi bim myun is "korean cold noodles" and you prepare these just like you do other ramen noodles except you drain the water and rinse the noodles with cold water to cool them down then mix the noodles and liquid seasoning pack. The mixture was a very sweet and salty taste. No spicyness at all which is a change of pace for korean ramen. This is the type of ramen you need to add your favorite vegetable or a boiled egg to. Overall a good ramen.
