This ramen is made with fresh rice sticks which you do not have to soak. After preparing the ramen the broth had a citris smell to it. The flavor was sour and salty. At times a lemon flavor would come through and even though there was some shrimp you could never taste a seafood flavor. A little bit of spice could be detect but I was surprised it was not spicy as it should be. I actually like the fresh rice noodles better than the dried rice noodles which are normally found in ramens. They seemed to not to clump together as they normally would have being dried. Overall a good ramen but it needs more spicyness.
