Country Bisquits


2 cups flour
2 tsps. baking powder
½ tsp.salt
¼ cup shortening
1 ½ - 2 cups milk
¼ cup melted margarine
Mix dry ingredients. Cut in the shortening with pastry blender or fork, until the mixture has texture of coarse meal. Add the milk and mix thoroughly to make dough. Knead til the dough is not sticky. Roll out and cut with bisquit cutter. Place bisquits in greased baking pan. Brush top with melted butter. Bake in a preheated 450º oven, 10 to 12 min. Makes about 24 bisquits.

Skillet Cornbread

1 cup butter milk
½ teaspoon baking soda
1¾ cups stone-ground corn-meal
½ tsp. baking soda
1 teaspoon salt
1 egg, beaten
2 to 3 tablespoons butter
Put the buttermilk and soda into a bowl and mix well. Sift into it the cornmeal, baking soda, and salt. Beat until smooth. beat in beaten egg. Heat 2 to 3 tablespoons butter in a heavy 10-in. frying pan. Swish it around to coat bottom and sides of frying pan. Pour any remaining butter into the batter and blend. Pour batter into the hot frying pan. Bake in a preheated moderate oven (375º), for about 35 to 40 min. or until set and shrinking from sides of the frying pan. Serve hot in wedges, with butter. (Or with butter and molasses.)

Country Ham Steak and Red Eye Gravy

1 center slice country ham, about 3/8 in. thick
1 cup water
Black coffee
If the ham is salty, soak the slice in water for 30 min. to 1 hour. Drain and pat dry.

Cook the slice in a heavy skillet slowly, til tender, about 20 min. Set aside in serving dish.

. Add 1 cup water to the skillet and cook, stir to loosen all the browned particles and pieces of "red" meat. Boil about 2 min. Add the coffee to darken. Makes about 3 servings.


Vivian's Delicious Double Chocolate Brownies


¾ cup baking cocoa
½ teaspoon baking soda
2/3 cup butter or margarine, melted & divided
½ cup boiling water
2 cups sugar
2 eggs
1-1/3 cups all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt
½ cup chopped nuts (optional)
2 cups (12 ounces) semisweet chocolate chips
In a large bowl, combine cocoa and baking soda; blend in 1/3 cup melted butter. Add boiling water; stir until well blended. Stir in sugar, eggs and remaining butter. Add flour, vanilla and salt. Stir in the nuts and chocolate chips. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350°F. for 35 - 40 minutes or until brownies begin to pull away from sides of pan. Cool. Makes:3 dozen. Top with powdered sugar or Fudge Candy Frosting.

Fudge Candy Frosting


Combine:
1 cup sugar
1 beaten egg
6 Tbs. cocoa (mixed with 2 Tbs. butter or margarine)
1 tsp. Vanilla extract
Bring to a boil, stirring constantly. Remove from heat and stir until of spreading consistency. Spread on cooled brownies. Cut brownies into 2" squares.


My Kid's Favorite Casserole

2 lbs. ground beef (browned)
½ large onion, diced
¼ cup diced bell pepper (optional)
2 cans cream of mushroom soup
½ can of milk (use soup can)
1 bag frozen potato rounds or "tots"
Brown the ground beef in large skillet. Add onion and bell pepper. Cook until the vegetables are soft. Add the cream of mushroom soup and milk. Mix well. Butter a 9" X 13" casserole dish. Add the meat mixture, top with the bag of potato rounds. Bake according to directions on package of potato rounds.
