My Mom is oringinally from Louisiana, although she has lived most of her adult life in Texas. She never really learned how to cook "cajun style"  But she sure knows Martha Stewart's style. Over the years she has made some of the most delectible dishes you have ever tasted. One of my favorites is her chocolate sheet cake. She loves to make a cake, and while it's still hot, eat a piece right out of the oven with a good cup of coffee.
Chocolate Sheet Cake
Combine 2 cups of flour
1/2 t. salt
2 cups of sugar-set these three aside.
In a saucepan mix:
1 stick of oleo
1/2 cup shorenting-crisco
1 cup water
3 T. cocoa
Bring this to a boil and pour over flour mixture---mix well.
In another bowl-
Beat 2 eggs-set aside
1/2 cup buttermilk
Dissolve 1 t. soda in the buttermilk
1 t. vanilla-Mom always adds a tad more.
Add the eggs buttermilk and vanilla to mixture
Bake at 350 for 20-25 minutes.
Icing
1 stick oleo
3 or 4 T. cocoa
6 T. milk
Melt oleo but don't boil.
Take off heat and add 1 box of powdered sugar.
Add 1 t. vanilla and nuts if desired.
Ice cake while it's still warm.
Mama's Strawberry Pie
2 T. strawberry jello1 Cup water
1 Cup sugar
2 1/2 T. corn starch
1/4 stick butter
2 Cups strawberries
5 or 6 drops red cake coloring

Cook pie crust
Cook sugar, water and corn starch until it is thick. Remove from heat. Add jello, butter and cake coloring. Let this cool and add strawberries. Mix and add to pie shell. You may top with cool whip.

Mom's Easy Peach Cobbler
1/2 Cup flour
2 T. Baking powder
1/2 Cup of sugar
1/2 Cup milk
pich of salt
2 t. vanilla
1 stick oleo melted in pan- you can cook in a pinch of cinnamon.
2 small cans or 1 large can of peaches. Bake at 350 for 20 min.
Pralines
1 1/2 cups brown sugar
1 1/2 cups white sugar
3 T white karo
1 cup milk
1 T canilla-Put in last

Stir mixture until it forms a soft ball in a cup.
Let it cool 10 minutes. Beat for 2 minutes. Add vanilla and 2 cups of pecans. Beat until it has a glo
ss.
Mom's Banana Nut Bread

2/3 cups of butter-oleo
1 1/2 cup flour
1 2/3 cup of sugar
1T. vanilla
1 t salt
1 t soda
1 1/4 cup bananas
2/3 cup of buttermilk
2 eggs
1 cup nuts

Mix soda and salt with buttermilk.
Then mix all together.
Put in loaf pan.
Bake at 350 or 400

Mom's Banana Pudding

4 bananas
1 can seetened condensed milk
1 container of cool whip
1 box vanilla wafers
1 box instant vanilla poudding.
