4 firm ripe or green medium tomatoes (about l/2 pounds)
1 egg, beaten
1 cup dry bread crumbs
1/3 cup butter or margarine
Salt and pepper
Wash tomatoes - cut into 1/2 inch slices.
Dip slices into egg and then into crumbs.
Melt butter in large skillet.
Add tomato slices, cook, turning once, until golden brown.
Season to taste - Serves 4.
Note:
Fried tomatoes have been a long time family favorite.
I prefer ripe tomatoes where my siblings prefer the green.
