We cook this dish for special occasions. Bryani is Assyrian in an area of Northern Iraq. Assryian at the time of Christ was a nation. Special occasions include family gatherings, for Christmas, for New Year.

BRYANI

Boiled whole chicken

1 lb ground beef

1 onion

black pepper and salt

2 peeled potatoes

1 cup raisins

1/2 almonds

1/2 cup frozen green peas

4 cups rice (Basmati Rice)

In a pot place cut up whole chicken and cover with water add salt, black pepper and simmer. After the chicken is cooked, remove the bones and cool. Cut into small pieces.

In skillet fry the peeled, sliced potato in a little oil. Remove potato in a bowl. Next fry the raisins; remove and add to potatoes. Then fry the almonds and add to the potatoes and raisins. Last fry the frozen green peas.

Mix the ground meat with salt, black pepper and diced onion. Mix well and shape into meatballs. Fry the meatballs in the skillet you used to fry the potatoes, raisins, peas and almonds.

In another pan with a little oil place the rice and fry. Add 4 cups of water to the rice and cook till the water is absorbed. Baharat is an Arabic spice you purchase at an Arabic Store. Add 2 teaspoons to the rice.

In a large bowl mix ALL the above ingredients well. It is ready to serve. Serve with salad, and Assryian Bread .
