Mama's Tater Soup

Taters are a comfort food. Mama sure knows how to comfort the soul with a good pot of homemade tater soup. Made with lots of TLC and I am quite sure she's praying while she's cookin it. This recipe was donated to Kat's Kountry Knook, by Mama. Bobby and I met Mama aka Miss Tommie, in my neck of the woods, Ocala National Forest. She's a Mama to everyone that knows her and if you ever meet her you'd call her Mama too. Thanks Mama...We love you and miss you. Hope I get this right.

  • 6-10 med to large potatoes (depend on how many mouths to feed)

  • 5-6 cups of water

  • 1 large carrot diced

  • 2 stalks of celery diced

  • 1 med. onion

  • 1 large can cream or evaporated milk

  • 1/4 cup corn starch (mix with a little cold water and stir til lumps out before adding to soup)

  • 5 chicken boullion cubes

  • 1 heaping TBSP of garlic powder

  • Parsley, salt and pepper to taste

Mama always starts with the celery, carrot and onion. In the water she cooks them til almost tender, then add how many potatoes you want with the chicken cubes, garlic, oleo, salt and pepper. Cook til tender, add large can of cream, bring just to a boil then thicken with cornstarch. Mama doesnt measure so this is as close as we can get. I can say to all that try it...is the best homemade tater soup I have ever eaten. Mama always makes up a big pot, she takes it to people that are under the weather. Whenever anyone is down you'll see Mama comin with lots of love and cheer, and a big ole pot of her tater soup. So make up a big ole pot...and share it with your friends, family and yes, even your enemys!

Mama will be proud.
