My Mom's Recipes


Here are some of my favourite recipes from my mom's cookbook. I love all of these and they are all soooooo good. You should try one today, you won't regret it.


Potato stuff

My most favourite food in the entire world. When I was growing up "casserole" was a four-letter word so she called it "Potato Stuff" so we would actually try it the first time. It worked... now we love it.

1 bag of frozen hash browns (perferably cavendish)
1/4 cup melted butter
1 can cream of mushroom or cream of chicken soup
1/2 cup finely chopped onion
1 cup grated cheddar cheese
1/2 cup crushed plain potato chips (optional)

Break up frozen hash browns into baking dish (corningware or rectangular baking dish, preferably one with a cover). Mix the melted butter, soup, onion, and cheese together and pour over the potatos. Sprinkle potato chips on top (optional). Bake for 45 minutes in a 350 degree oven. Soooo yummy.


Apple Cake

A really good summertime dessert.

4 cups diced, peeled apples
2 cups white sugar
2 beaten eggs
1 cup oil
2 cups flour
2 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla
1/2 tsp. baking soda
1 cup chopped nuts (optional)

Combine apples with white sugar. Add 2 beaten eggs and oil. Mix in flour, cinnamon, salt, vanilla, baking soda, and chopped nuts (optional)
Pour into a medium size baking dish and bake for 45-50 minutes at 350 degrees


Cherry Cheescake Delight

Not a real cheesecake but just as yummy, and easy to make.

1 1/2 cups graham cracker (crushed)
1/2 cup brown sugar
1/2 cup melted butter
1 8oz pkg cream cheese (softened)
1 cup icing sugar
1 pkg dream whip
1 can cherry pie filling

Mix graham crumbs, brown sugar, & butter and press gently into rectangular pan.

Cream icing sugar & cream cheese. Make the dream whip & add to the mixture. Mix well. Spread on top of graham cracker base. Top with Cherry pie filling. Chill. Cut into squares.


Mud Cookies

Great for kids.

3 cups rolled oats
1 cup shredded coconut
4 tbsp. cocoa
1/2 cup milk
2 cups white sugar
1/2 cup butter or marg.
1/2 tsp vanilla

Mix coconut, oats, cocoa in a bowl. Place milk, sugar, vanilla, & butter in suacepan to melt. Take off stove when ingrediants start to boil. Mix contents of bowl into saucepan. Quickly drop cookies by spoonfulls onto waxed paper placed on cookiesheets. Refrigerate for several hours.


Crab Dip

This crab dip is so easy to make with a blender and it is sooooo good, I always make it for parties... and for snacking alone... I'm bad.

1 can (5 oz) crab meat or 1 pkg (6 oz) crab meat, thawed
1 pkg (8oz) cream cheese, softened
1/2 cup mayonnaise
2 tbsp. ketchup
3 tbsp French dressing
2 tbsp finely chopped onion

Blend cream cheese, mayo, ketchup, french dressing, & onion until smooth. Drain crab & add to mixture, mix well. Chill for several hours.


Chocolate Chip Zucchini Cake

Sort of like Carrot cake but more moist and chocolatey and scrumptious. Mmmmm.

1 3/4 cups white sugar
1/2 cup soft margarine
1/2 cup vegetable oil
2 eggs
1/2 cup sour milk (milk + a bit of vinegar)
1 tsp. vanilla
2 1/2 cups unsifted four
1/2 tsp. baking powder
1 tsp. salt
1 tsp. soda
4 tbsp. cocoa
2 cups finely grated zucchini
1 cup chocolate chips

Cream margarine, sugar, oil. Add eggs, vanilla, sour milk. Beat with mixer. Stir dry ingrediants (in separate bowl). Add to first mixture. Stir in zucchini. Spread mixture into baking pan (greased & floured). Sprinkle with chocolate chips. Bake 325-350 degrees in oven for 45 minutes.


Blueberry Muffins

Very good blueberry muffins.

1/2 cup veg. oil
3/4 - 1 cup white sugar
2 eggs
1/2 cup milk
1/2 tsp. lemon or vanilla
2 cups flour
1/2 tsp. salt
3 tsp. baking powder
1 1/4 cup blueberries

400 degree oven. Sift dry ingredients into med. size bowl. Add berries Stir gently. In large mixing bowl beat eggs. Add sugar, then oil, then milk & flavouring. Stir dry ingredients into liquids gently, Just until everything is moist. You can spray a bit of pam into muffin tins. Spoon into muffin tins. Makes 1 doz. large muffins. Bake approx 20 minutes.
