Debbie and I have been working with Hen Eggs and believe you me it is not easy to work with the eggs that we are able to get at this time. The shell's have become paper thin, plus the jumbo's seem to be getting smaller each time we get them, but all in all we manage to come out with something special. Together we have only lost two egg's. We also work with Ostrich eggs, when we can get them. Our supplier lost his producers. We think the Hurricanes that hit us this year might be the reason. We do the best we can to bring a different egg each time. No two are alike that we can guarantee. Along with the egg comes a certificate telling about the egg and the number.
