Nothing is quicker or easier when you need a dessert in a hurry than this recipe. It's a Fanny Farmer cake that has it all - texture, taste and eye appeal. Best of all, you probably have every ingredient at your fingertips.

Lightning Cake 2 eggs 1 tsp vanilla 1 cup sugar 1 cup flour 1 tsp baking powder ¼ tsp salt ½ cup Hot milk 1 TBSP butter Preheat the oven to 375° F and butter an 8 x 8 x 2 square pan. Beat the eggs and vanilla until thick. Beat the sugar in a little at a time. Sift together the flour, baking powder and salt and stir in. Heat the milk and butter until the butter melts. Stir the milk and butter into the mixture and mix well. Beat for 1 minute or until smooth. Pour into the prepared pan and bake until done. (about 25 minutes). OPTIONAL: Add fruit! After the batter is in the pan, place a layer of fruit on top. Blueberries or drained, canned peach slices are best. Put as much or as little of the fruit as you like. Then sprinkle the whole top with cinnamon and sugar and bake as above. When cool, flip onto a plate and there you are - homemade dessert ias quick as - well - lightning.
