Chunky Bacon and Pepper Tomato Sauce

Ingredients:

  • 1lb bacon

  • 2 red peppers

  • 2 green peppers

  • 2 large onions

  • 4 cloves of garlic 

  • can of diced tomatoes
  • can of stewed tomatoes
  • can of diced tomatoes with chilies
  • can of tomato soup
  • salt and pepper
  • sugar

Preparation:

  • 1 lb. Bacon – cut off excess fat and cut into 1 in. squares/strips

  • Sauté in Dutch oven type pot until done, but not crunchy.  Remove from pot and drain on paper towels.  Set aside.  Reserve enough bacon grease in pot to sauté vegetables. 

  • Cut following veggies into 1 in. squares:
    (2) red peppers (2) green peppers (2) large onions

  • mince (4) cloves of garlic

  •  Sauté in reserved bacon grease until tender

  • When veggies are tender, add: (1) can of each of the following diced tomatoes, stewed tomatoes, diced tomatoes with chilies, and tomato soup.

  • Note:  if more liquid is needed, V-8 juice or tomato juice works well

  • Add salt, pepper, and some sugar to taste.

  • Sauce needs to simmer for 15 min.
