Chunky
Bacon and Pepper Tomato Sauce
Ingredients:

1lb
bacon
-
2
red peppers
-
2
green peppers
-
2
large onions
-
4
cloves of garlic
- can
of diced tomatoes
- can
of stewed tomatoes
- can
of diced tomatoes with chilies
- can
of tomato soup
- salt
and pepper
- sugar

Preparation:
-
1 lb. Bacon – cut off excess
fat and cut into 1 in. squares/strips

Sauté in Dutch oven type pot
until done, but not crunchy.
Remove from pot and drain on paper towels.
Set aside. Reserve
enough bacon grease in pot to sauté vegetables.

Cut following veggies into 1
in. squares:
(2) red peppers (2)
green peppers (2) large onions
-
mince (4) cloves of garlic
-
Sauté
in reserved bacon grease until tender

When veggies are tender, add:
(1) can of each of the following diced tomatoes,
stewed tomatoes, diced tomatoes with chilies, and tomato soup.

Note:
if more liquid is needed, V-8 juice or tomato juice works
well

Add salt, pepper, and some
sugar to taste.

Sauce
needs to simmer for 15 min.
