Rueben Casserole

Ingredients:

  • 1lb Corn Beef

  • 1/2lb Swiss Cheese 
    (can use low-fat cheese)

  • 1 can Sauerkraut, drained

  • Thousand Island dressing

  • 6 slices of bread, cubed 
    (you can use any bread you like)

  • 4 tbsp butter, melted

Preparation:

  • Heat oven to 350 degrees

  • Cover the bottom of a 13X9 casserole dish with the corn beef, then sauerkraut

  • Cover with Thousand Island dressing

  • You can use how ever much you like, just make sure you completely cover the sauerkraut

  •  Layer the dressing with Swiss cheese

  • Toss the bread cubes in the melted butter and layer on the top of the Swiss cheese

  • Cook in the oven until the bread is lightly toasted, 
    about 20-30 mins.   

  • Serves 6-8 people
