Harvest Cake

4 cups diced fresh apples
2 cups sugar
1 cup oil
2 eggs
1 tsp. vanilla
3 cups four-bean flour mix (Bette Hagmans's)
2 tsp. baking soda
1-1/2 tsp. xanthan gum
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg

1 cup chopped walnuts

Mix together apples and sugar and let stand one hour stirring every now and then.  The sugar will make a syrup mixture with the apples.
Mix dry ingredients together.  Set aside.

Meanwhile, beat eggs, add oil and vanilla.  Add apple-sugar mixture.  Stir in dry ingredients.  Add walnuts.

Grease and flour a tube pan.  Bake in 350 degree oven for 1-1/4 hours or until done.
You can also make mini loaves.  Bake about 25 minutes or until done.  Freezes well.
