Torta de Papas (Potato Omelet)

6 medium potatoes, cut in 1/4-inch slices
1 c. + 3 Tbls. vegetable oil
6 eggs
1 Tbl. chopped fresh parsley
salt and freshly ground black pepper, to taste

Heat 1 cup oil in a heavy frying pan, and fry the potatoes on very high heat for 5 minutes until golden brown, turning them several times. Remove and drain on paper towels. Mix remaining ingredients, except 3 Tbls. oil, beating the eggs well. Add the cooled potatoes.

Heat 3 Tbls. of vegetable oil in the same pan, and slowly add the egg-potato mixture. Distribute potatoes evenly, and cover. Cook on medium-low heat for 4 minutes. Flip the omelet, and cook for another 4 minutes. Serves 6.
