GROUND BEEF & NOODLE BAKE

6 oz medium egg noodles

1 lb ground beef

1 c sliced fresh mushrooms (optional)

1/3 c chopped onion

2 cloves minced garlic

16 oz canned tomato sauce

1/2 tsp freshly ground pepper

1/4 tsp salt (optional)

12 oz small curd cottage cheese

8 oz sour cream

1/3 c chopped green onions

2 Tbsp grated Parmesan cheese

1 Tbsp poppy seeds (optional)

3/4 c shredded sharp Cheddar cheese, divided

Cook noodles according to directions, omitting salt. Drain & set aside.

Cook ground meat, mushrooms, chopped onion & garlic in large skillet over medium heat until meat is browned & crumbly.

Drain & pat dry with paper towels.

Wipe skillet clean.

Return meat mixture to skillet. Add tomato sauce, pepper & salt.

Combine cottage cheese & next 4 ingredients in a large bowl.

Stir in meat mixture, noodles & 1/3 c Cheddar cheese.

Coat a 2 quart casserole with cooking spray. Place noodle mixture in casserole. Cover & bake.

OVEN: 350º

BAKE: 20 minutes

After 20 minutes uncover; sprinkle with remaining cheese.

Bake, UNCOVERED, an additional 5 minutes.

YIELD: 4 - 6 servings
