Cinnamon Loaf

Ingredients:
1/3 Cup Sugar
2 Tbsp. Softened Margarine
1 Tbsp. Cinnamon

Combine sugar margarine and cinnamon and set aside.

1/2 Cup Shortening
3/4 Cup Sugar
1 tsp. Vanilla
2 Eggs
2 Cups Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1 Cup Milk
1 Tbsp. White Vinegar
Grease and flour the bottom only of a 9x5x3 inch loaf pan.  Cream shortening, sugar, and vanilla in medium mixing bowl.  Add eggs and beat well.  Add baking powder, soda, and salt.  Combine milk and vinegar in measuring cup.  Add flour alternately with milk mixture, blending well after each addition.  Turn half the batter into the loaf pan.  Sprinkle with cinnamon mixture.  Top with remaining batter.  Swirl with knife.  Bake at 325° for 45 minutes or until inserted toothpick comes out clean.  Let cool and turn out on serving plate.  (Hint--put a layer of foil under the loaf pan during baking in case your mixture bubbles over.
