Spring
In the spring of the year, I always love the freshness of new life in nature, and the reminder that new opportunities lie ahead! 
Our family always looks forward to the fresh fruits this time of year. Then it is time for Fruit Pizza !

                        FRUIT PIZZA
1 18 oz package of refrigerated sugar cookie dough
1 8 oz pkg of cream cheese, softened to room temperature
1/3 cup sugar
1/2 teaspoon vanilla
4 cups of fresh fruit (your choice but colorful- banana slices,half grapes,blueberries, or you can use canned fruit like drained fruit cocktail in off seasons)
1/4 cup orange marmelade
1 tablespoon water

Cut dough into thin slices about 1/8 inch thick: line pizza pan with slices touching which will cook together to form your crust. Bake at 325 for about 12 minutes or till lightly browned. Let cookie crust cool. Blend cream cheese,sugar and vanilla, and spread over cookie crust. Arrange fruit over cream cheese mixture then glaze with a mixture of the marmelade and water (the marmelade is to prevent the fruit slices from turning dark as quickly) Chill. Makes about 12 servings . We even like this for breakfast!
