JOY'S CHOCOLATE CHIP MUFFINS
2 cups Bisquick
3/4 cup sugar
Beat together:
1 egg
3/4 cup milk
1/3 cup vegetable oil
1 1/2 cups chocolate chips
Put Bisquick and sugar in bowl-make a well in the center. Add liquid mix and stir till dry ingredients are mixed in well. Stir in chocolate chips.
Put liners in muffin tin. Spray inside with no stick spray. Fill liner cups 2/3 full. Bake at 375 degrees for 20 to 25 minutes or till lightly browned on top.
HOT CHOCOLATE MIX 1 1- LB can of Nestle's Quik
1- 16 oz. Carnation Dry Powdered Milk
1/2 box confectioner's sugar
1 -8 oz. jar of coffee creamer
Stir together all ingredients in a large airtight container .
To use-- Mix 1/3 cup of mix to 1 cup of boiling warer.
For one cup- or mix 3 heaping teaspoons of mix to 1 cup of water
I love to make up a big batch of this when cold weather first begins. Great to have on hand and add marshmellows and sit and sip by the fire!!
