Ye Olde Home Made Hooch

This recipe makes 5 gallons(18.9 liters) of mead
Ingredients:

15 lbs light honey
1 tbsp gypsum
1/2 oz dried champagne yeast
1/4 tsp irish moss powder


Process

STEP 1

Put all the ingredients except the champagne yeast into 1.5 gallons(5.7 liters) of water and then boild the water for 15 minutes. The hot mixture produced is called wort. Mix the wort with 3.5 gallons(13.2 liters) of cold water in a resealable container.

STEP 2

Soak the champagne yeast in in 105ºF water for 10 minutes. Put it into the wort when the temperature of the mix drops below 80ºF.

STEP 3

Let the mead ferment in a cool, dark place; this can take anywhere between 3 weeks and several months. The longer you let it ferment, the higher the alcohol content will be, the higher the alcohol content the more debauchery that will be comitted. When the mead clears, move the liquid to another resealable container. Bottle it, invite some friends over , remove your clothes, howl at the moon and burn a neighbouring village or two, Wassail!
