Lemon Squares
2 1/4 cups all purpose flour, divided
1 stick butter or margarine, melted
1/3 cup lemon juice (fresh)
1/2 tsp baking powder
1/2 cup sifted powdered sugar
4 eggs beaten
2 cups sugar
Combine 2 cups flour & 1/2 cup powdered sugar; add butter, mixing well. Press mixture evenly into 13 x 9 x 2" baking dish. Bake at 350 for 20 minutes.
Combine eggs, sugar and lemon juice in a medium mixing bowl. Beat well. Sift together 1/4 cup flour and baking powder in medium bowl; stir into egg mixture. Pour over baked crust. Bake @ 350 for 25 minutes or until lightly browned and set. Sprinkle lightly with 10x sugar. cool, cut in l" squares.
If you like an icing, beat about 6 oz. of softened cream cheese and 3/4 to l cup powdered sugar; spread over squares.
Additional sifted powdered sugar for a topping if the icing is not made. Just sprinkle on top.
