EGG MAYONAISE SANDWICH

 

2 hard boiled eggs

2 slices of white bread

1 dessert spoon mayonaise or own preferences

a dash of pepper

a pinch of salt

 

Method

 

Smash eggs with fork till bits

Add pepper and salt

Mix mayonaise last and stir them evenly

Spread the smashed ingredients on the bread and serve.

FRENCH TOAST

 

2 slices of bread, each cut into 2 pieces

1 tablespoon milk (optional)

1 egg, beaten

a pinch of salt

2 tablespoons oil (lesser if you’re health-conscious)

1 tablespoon sugar

 

Method

 

Mix the milk, sugar, egg and salt

Dip the bread into the mixture until saturated

Heat the oil. Fry the bread till light brown

Note : (Do not overheat the pan)

Place on a plate and serve hot

SOUP 1

 

250 - 300grams of pork ribs

3 carrots

4 large potatoes

1 – 2 corns/maize

1 big onion

salt

soya sauce

pepper (optional)

 

Method

 

Wash pork ribs and put it in a pot fill with water. Add a teaspoon of salt.

Bring to boil. Reduce heat to medium and remove surface debris. Continue to cook until the soup surface is clear; reduce heat to low and half cover the pot to cook for awhile.

Next, peel and dice carrots and potatoes. As for onion, do not dice it but cut into quarters. Chop the corns into 3 parts and clean all ingredients b4 putting all into the pot except for potatoes. After boiling all with the ribs in the pot and it is almost cook, add potatoes in and cook till soft.

Note : Purpose of cooking potatoes last is to prevent the soup from becoming cloudy after prolong boiling.

Add seasonings to prefered taste and serve hot.

CHICKEN MACARONI

 

75 gms macaroni          

1 chicken drumstick, thigh or breast (your preferences)

25 gms carrot, diced

500 ml water     

½ teaspoon salt

1 tablespoon peas

pepper      

Chopped coriander leaves (for garnishing)

Chopped spring onion

Fried shallots

Sliced chilli (optional)

 

Method

 

Boil water in saucepan. Add pinch of salt and the macaroni to the boiling water.

Boil macaroni for 10 to 15 mins or until ready. Drain the macaroni and then run cold water through it.

Put the chicken, diced carrot, water and salt to saucepan.

Boil gently until chicken is cooked. Remove the chicken and allow to cool. Shred the chicken.

Add peas and pepper to the chicken stock.

Place macaroni and shredded chicken in serving bowls. Add the hot soup.

Garnish and serve hot.
