Potato Salad

Great for a picinic, pot luck or just as a wonderful side dish.

Ingredients

3/4 cup Miracle Whip or Mayonnaise

1 tsp. yellow mustard

6 cups cubed cooked potatoes (about 1 1/2 pound)

2 hard cooked eggs, chopped

1/2 cup celery

1/2 cup frozen peas, thawed

1/4 cup chopped onion

Directions

Mix salad dressing and mustard in bowl.

Add remaining ingredients: mix lightly. Season to taste with salt and pepper. Refrigerate.

Makes 6 to 8 servings. Suggestion: Use red skinned or new potatoes. Not only will it be a pretty color and pleasing to the eye but the potatoes cube neatly after boiling and absorb the dressing well.
