This is my most favorite fruit salad.. My grandmother use to make it for special occasions and then handed it down to my Mom and last Thanksgiving it was handed down to me..
1 cup sugar
2 Tablespoons corn starch
1 cup pineapple juice (drain large can use all)
2 eggs beaten well
dash salt
1/4 cup margarine
apples
1 large can, drained, pineapple
bananas
seedless grapes
1 package mini marshmellows
Mix first 6 ingredients in small saucepan over low heat. Stir constantly. Cook till thick like the consistency of pudding. Chill 1 hour before serving.
Dice all of your fruit and combine with marshmellows in a large bowl.
Slowly add your dressing to the mix. I usually start with 3 Tablespoons and go from there till I get the amount I want.
I realize there are not a lot of specific amounts and that is how it was handed down to me. I've only made this once and I think it was about 3 apples, 4-5 bananas, grapes were just cut in half and I left the pineapple alone. Any of the dressing I didn't use I froze for future use.
