African Artichoke Salad (Morocco/Algeria)

Artichoke Hearts

Quartered

4 large

Navel Oranges

Peeled &sectioned

1 bunch

Radishes

Thinly sliced

20

Kalamata Olives

Pitted and halved

2 tablespoons

Extra virgin Olive oil

Can be infused

 

Lemon juice to taste

 

1/2 teaspoon

paprika

 

 

Baby spinach

As a bed

 

 Arrange Baby Spinach on a salad plate. Alternate orange and artichoke. Garnish with radish and olives. Whisk olive oil lemon juice and paprika. Pour over composed salad.
