Apples in cheese envelopes

Ingredients:

  1. 1 egg beaten with 1T milk
  2. Powdered sugar
  3. 5 medium-size tart cooking apples, peeled
  4.  cored and cut into 1/2" pieces
  5. 1/4C sugar
  6. 1T all-purpose flour
  7. 2t fresh lemon juice
  8. 1/4t ground cinnamon
1 recipe cheese croissant dough made with sharp cheddar cheese,  ready for shaping

 

 

 

 

 
How to Prepare:

Preheat oven to 350F.  Combine filling ingredients in baking pan and mix well.  Cover pan loosely with foil.  Bake until apples are very soft but some texture remains, about 30 minutes.  Let cool in pan on a rack.

Divide cheese croissant dough in half.  Return half to refrigerator.  Roll remaining dough out on lightly floured surface to form a rectangle slightly more than 12" X 16".  Using a pastry wheel (or ravioli cutter for a more decorative edge) trim to exactly 12" X 16".  Cut rectangle evenly into twelve 4" squares.

Arrange scant tablespoon filling in center of each square. Fold opposite corners into center, overlapping slightly and pinching corners together securely. Repeat with remaining opposite corners. Repeat with remaining dough.  Brush with egg mixture.

Set pastries aside to rise uncovered in a warm (70F- 75F) area and let rise until almost doubled in volume, about 1-1/2 hours. Reglaze with egg mixture.

Preheat oven to 450F.

Place rack in oven center, place baking sheet in oven, reduce temperature to 400F.  Bake until puffed and golden brown, about 15-20 minutes.  Immediately transfer from baking sheet to rack and dust with powdered sugar from sifter.  Serve immediately, or cool on rack and serve at room temperature.
