Pumpkin Bread
- 3 1/3 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 2/3 cup butter
- 2 2/3 cup sugar
- 4 eggs
- 1 16 oz. can pumpkin
- 2/3 cup water
- 2/3 cup chopped nuts
- 2/3 cup raisins, optional
Instructions:
Heat oven to 350. Grease 2 9x5x3 loaf pans. Blend flour, baking soda, salt, cloves, cinnamon and baking powder; set aside. In a
large mixer bowl, cream butter with sugar until light and fluffy. Stir in eggs, pumpkin and water. Mix well. Blend in dry ingredients until mixture is smooth. Stir in nuts and raisins. Divide batter evenly between the two prepared pans. Bake for 65-75 minutes or until they test done. Cool in pans for 10-15 minutes. Remove from pans and cool on wire racks.
