SUGARED PORT COOKIES
(Yield: 4 dozen)

1 12-ounce package vanilla wafers
½ cup cocoa powder
1 cup pecans
¼ cup corn syrup
½ cup port, sherry, or orange juice
½ cup confectioners’ sugar

In food processor, combine vanilla wafers, cocoa powder, and pecans; process to fine crumbs.  Add corn syrup and port; process for 15 seconds or until well blended.

Form the dough into 1-inch balls, roll in confectioners’ sugar.

Store up to 1 month in an airtight container.  Freeze up to 2 months.
