PORTUGUESE COOKIES
(Yield: 3 dozen)

¼ cup butter or margarine, softened
1¼ cups sugar
3 eggs
3½ cups self-rising flour

Preheat oven to 350°F.  Spray a baking sheet with non-stick vegetable spray.

In a large mixing bowl, cream butter and sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Stir in flour, 2 tablespoons at a time, until used up.  Shape into walnut-sized balls; roll into a 6-inch rope.  Place on prepared baking sheet, forming into a circle.

Bake 20 to 25 minutes or until lightly browned.  Remove from baking sheet; cool completely on a wire rack.
