PEANUT
BUTTER AND JELLY COOKIES
(Yield: 3½ dozen)
½ cup sugar
½ cup firmly packed brown sugar
½ cup peanut butter
¼ cup shortening
¼ cup butter or margarine, softened
1 egg
1¼ cups self-rising flour
½ cup finely chopped peanuts
Any flavor jelly or jam
In a large mixing bowl, combine sugars, peanut butter, shortening,
butter, and egg; beat until well blended. Stir in flour until well
blended.
Preheat oven to 375°F. Lightly spray cookie sheets with
non-stick vegetable spray.
Shape dough into 1-inch balls; roll in peanuts. Place, 3-inches
apart, on prepared cookie sheets; press thumb in the centers.
Bake 10 to 12 minutes or until set. Spoon a small amount of
jelly into the thumbprint. Cool for 2 minutes. Remove from
cookie sheets; cool completely on a wire rack.
