PEANUT BUTTER THUMB PRINTS
(Yield: 7 dozen)

1½ cups butter or margarine, softened
1¼ cups sugar
1 egg
¾ cup peanut butter
3½ cups self-rising flour
Jam or preserves

In a large mixing bowl, beat butter until light and fluffy.  Add sugar; beat until creamy.  Add egg and peanut butter; beat well.  Add flour; beat until well blended.  Cover and chill for 1 hour.

Preheat oven to 350°F.

Using 1 tablespoonful of dough for each, shape into 1¼-inch balls; place on UNGREASED cookie sheets.  Press down centers with thumb.  Fill indentations with jam.

Bake 10 to 12 minutes or until delicately browned.  Remove from cookie sheets; cool on a wire rack.
