ORANGE-MACADAMIA

COOKIES
(Yield: 6 dozen)
4 cups all-purpose flour
2 cups confectioners’ sugar
1 cup cornstarch
2 cups butter or margarine
1 cup chopped macadamia nuts
2 egg yolks
1 tablespoon grated orange rind
4 to 6 tablespoons orange juice

Grated orange rind
Preheat oven to 350°F. Lightly spray
cookie sheets with non-stick vegetable spray.
In a large mixing bowl, combine flour, confectioners’
sugar, and cornstarch; cut in butter until mixture resembles coarse crumbs.
Add nuts; toss to mix well. In a cup, combine egg yolks, grated orange
rind, and 4 tablespoons orange juice; add to flour mixture, stirring until
moistened. If necessary add remaining orange juice.
On a lightly floured board, knead dough until
it forms a ball. Pinch off enough dough to roll into 1¼-inch
balls. Arrange balls on prepared cookie sheets. With the bottom
of a glass dipped in sugar, flatten the balls to ¼-inch thickness.
Bake 12 to 15 minutes or until edges begin
to brown. Remove from cookie sheets; cool completely on a wire rack.
Frost with Orange Frosting; sprinkle with grated orange rind.
ORANGE FROSTING
2 cups confectioners’ sugar
3 tablespoons butter or margarine, softened
1 teaspoon grated orange rind
2 to 3 tablespoons orange juice
In a medium bowl, combine all ingredients;
stir until smooth and of spreading consistency.
