KOURABIEDES
(Greek Butter Cookies)
(Yield: 2½ dozen)

1 cup butter or margarine, softened
¼ cup sugar
2 egg yolks
1 teaspoon vanilla extract
½ teaspoon almond extract
2½ cups self-rising flour
½ cup finely chopped nuts
Whole cloves
Confectioners’ sugar

Preheat oven to 350°F.  Spray cookie sheets with non-stick vegetable spray.

In a large mixing bowl, beat butter, sugar, egg yolks, and extracts until light and fluffy.  Knead in flour and nuts until well combined.  Turn out onto a lightly floured board; divide in half.  Shape each half into a 16-inch roll; cut into 1-inch slices.  Shape each piece into a ball; press in a whole clove.  Place, 1-inch apart, on prepared cookie sheets.

Bake for 20 minutes or until cookies are set but not brown.  Remove from cookie sheets to a wire rack; dust with confectioners’ sugar.  Cool completely.
