CHOCOLATE BROWNIES
(Yield: 16 squares)
½ cup butter or margarine
1 4-ounce package German sweet chocolate, broken into squares
½ cup sugar
1 teaspoon vanilla extract
2 eggs, lightly beaten
1 cup self-rising flour
Preheat oven to 350°F. Spray a 9x9-inch baking pan with
non-stick vegetable spray.
In a saucepan, melt butter and chocolate, stirring until smooth.
Cool slightly. Add sugar and vanilla; mix well. Beat in the
eggs. Stir in flour. Pour into prepared baking pan.
Bake 18 to 22 minutes or until a tester inserted in the center comes
out clean.
TOPPING
2 tablespoons butter or margarine, melted
½ cup firmly packed brown sugar
1 cup flaked coconut
½ cup chopped pecans
2 tablespoons corn syrup
1 tablespoon milk
Preheat broiler.
In a medium bowl, combine butter and brown sugar. Add coconut,
pecans, corn syrup, and milk; mix well. Drop by teaspoonfuls onto
warm brownies; spread evenly.
Broil, several inches from the heat for 2 to 4 minutes or until top
is browned and bubbly. Cool in pan on a wire rack. Cut into
bars.
