FUDGY
BROWNIES
(Yield: 2 dozen)
1 cup butter or margarine
2 cups semisweet chocolate morsels
1 cup sugar
4 eggs
1 teaspoon vanilla extract
1¼ cups self-rising flour
1 cup chopped, toasted pecans
Preheat oven to 350°F. Line a 13x9-inch baking pan with
aluminum foil, letting ends extend above the pan. Spray with non-stick
vegetable spray.
In a 3-quart saucepan, over medium heat, melt butter. Add chocolate
morsels, stirring until melted and smooth. Remove from heat and stir
in sugar. Add eggs and vanilla; stir briskly until blended.
Stir in flour, then ¾ cup pecans. Pour into prepared baking
pan. Sprinkle with remaining pecans.
Bake 30 to 35 minutes or until a toothpick inserted in the center
comes out with moist crumbs attached.
Lift foil by ends onto a cutting board. Peel off the foil;
cut into squares.
