COCONUT
COOKIES II
(Yield: 6 dozen)
1 cup butter or margarine, softened
1 cup sugar
1 cup firmly packed brown sugar
2 eggs
2 cups flaked coconut
½ teaspoon vanilla extract
2 cups self-rising flour
2 cups whole wheat flake cereal
Preheat oven to 400°F.
In a large mixing bowl, cream butter and sugars until light and fluffy.
Add eggs, one at a time, beating well after each addition. Stir in
coconut, vanilla, flour, and cereal. Shape the mixture into 1-inch
balls; place on UNGREASED cookie sheets.
Bake for 12 minutes or until lightly browned. Remove from cookie
sheets; cool on a wire rack.
