CHOCOLATE-PISTACHIO STICKS
(Yield: 5 dozen)

1 cup butter or margarine, softened
½ cup confectioners’ sugar
1 teaspoon vanilla extract
2¼ cups all-purpose flour
1 cup semisweet chocolate morsels
1 teaspoon vegetable oil
½ cup finely chopped pistachios

Preheat oven to 350°F.

In a large mixing bowl, cream butter, confectioners’ sugar and vanilla until light and fluffy.   Beat in flour until blended.  Roll ¼-cupfuls of dough into 15-inch-long ropes, then cut each into 6 pieces.  Place, 2-inches apart, on UNGREASED cookie sheets.

Bake for 10 minutes or until cookies feel firm.  Remove from cookie sheets; cool on a wire rack.

In a small glass bowl, combine chocolate morsels and oil.  Place over hot water and stir until chocolate melts.  Place pistachios in a small bowl.

Dip one end of each cookie into the chocolate and then into the pistachios.
